How many kilos of rice do I need for 60 people?
Three main factors you need to think about is the water ratio, method of cooking and portion size.
- When cooking Japanese rice(short glutinous grains) the optimal ratio is about 1:1 of water and grain. Normally when cooking smaller portions you add additional water to compensate for the water that evaporates and turns to steam while you cook so in most recipes you will see recipes asking for 1 cup and a couple extra tbsp of water for each cup of rice. However you are cooking a very large numbers of servings so the evaporation will be negligible. You can stick with 1:1 ratio.
- To cook the rice you can use either a large stock pot on the stove top or put it into a large pan and bake in the oven. For the first method, you need a really thick stock pot(a thicker pot results in better heat distribution which results in less burnt bits at the bottom). I would recommend doing 30 servings at a time. Measure out the rice and water and bring to a boil. Then turn the flames down really low and simmer with the lid on for 30-45 minutes. Then turn off the heat and let it sit with the lid on for at least 15 minutes. To make it in the oven, measure 30 servings of rice and water in a large oven safe pan and bake at 325F for around 30-45 minutes. Turn the oven light on and check if all the water have been absorbed into the rice. Using this method I would increase the amount of water to about 1:1.1 of rice to water.
- Rice will generally double in volume when cooked compared to its uncooked version. If you are making 60 1/2cup servings of rice you would need 15 cups of uncooked rice. Or if you are going with 3/4 cups per person, you would need 22.5 cups of uncooked rice.6 kilo of uncooked rice is around 25 cups so your estimation was pretty close to the mark. I would cook all 6 kilo of rice. Its better to have a bit extra than to not have enough.

- Why would you recommend 30 servings at a time? Is it because of the space in the pan, or because its faster and/or less burned rice? Aug 18, 2015 at 18:31
- It is certainly possible to do all 60 servings in one go but you would need at least a 20 quart stock pot/pan to do so. Breaking it down to 30 servings seems much more manageable. But if you have pots and pans big enough to accommodate that, there is no reason not to. Aug 18, 2015 at 23:03
I’ve seen this at some take out: Do this in smaller batches that can be easily handled. They prepared all the rice in advance and put individual portions in small food and heat safe plastic bags. I assume they keep it in the fridge until serving time, and when they setup service, they put the individual bags in a steamer. Max Max 20.4k 1 gold badge 34 silver badges 52 bronze badges 1
Unfortunately I don’t have the option to cook anything it advance, I just have the day itself a few hours to prepare everything (with some help). Otherwise it would have been an option. Aug 18, 2015 at 23:29
You can’t boil any rice for 30-45 mins, let alone let it sit for another 15 mins while it cooks under it’s own heat further. At solid boil, rice is done in max.10 mins. At boil and steam down, max 20 mins. So with a 40 litre pot, you’re gonna need to pre-boil the water, then add rice, and remove fast after 10 mins or so, or it’ll cook itself into a mush off the fire after 20 mins (and for the next 5 hours after, till water in pot is cool). 1
On the contrary, if you measure out the correct ratio of water to rice, and insure that you are lowering the heat to minimum after its come to a boil, it steams the rice to perfect doneness slowly without risking any burned bits at the bottom. This is especially important since you are dealing with a larger pot of rice. You might run into mushy rice if you are using improper water to rice ratios. Feb 11, 2016 at 16:15

How much water do I need for 60g of rice?
How to cook rice on the stove –
- 1 cup basmati rice per serving (or weigh 75g per person)
- 2 cups (or 150ml) water
- Measure the rice into a cup and level the top, or weigh the amount of servings you want into a jug and note the liquid level it comes up to.
- Pour the rice into a bowl and pour in enough cold water to cover it. Jostle and move the rice in the water to remove the starch
- Drain well using a sieve, then repeat the rinsing process until the water becomes clear, once jostled. If you have time, soak the rice in cold water for at least 30 minutes. This will help the grains cook more evenly.
- Tip the rice into a pan over a low heat.
- Add double the volume of water to rice (2 cups, or 150ml water for a 75g serving) plus some salt, if you like.
- Bring to a boil, Swirl the rice in the pan (or stir once) to make sure it’s well distributed.
- Put a lid on and turn the heat down to as low as possible, If you cook the rice on too high a heat, it will cook too quickly and may end up chalky in the centre.
- Simmer gently for 10 mins and do not take the lid off, Check the rice is cooked at the end by trying a grain – this should also be indicated by the appearance of small holes on the surface and all the water having been absorbed. Keep cooking for another couple of mins if it isn’t quite ready, then turn the heat off.
- Fluff the rice with a fork and serve it straightaway if you like in a bowl, but if you cover it with a tea towel for 10 minutes, any residual water will be absorbed. You can then fluff up the grains for an even better texture.
Our preferred method is to cook rice on the stove, however if this is not available, or you would prefer to use the oven or microwave then this is also possible. Oven cooking is ideal if you have large quantities of rice, whilst the microwave method is quickest.
How many kcal in 1 cup of rice?
Rice is a staple food for more than half of the world’s population. According to this article from 2016 in the Journal of Nutritional Science and Vitaminology, there are over 110,000 cultivated varieties of rice, and we typically group the grain into two categories: White and brown.
Of the two, white rice is more widely consumed and preferred by many people. But you may be wondering if it’s healthy to eat. Here’s what you should know about white rice nutrition, how it compares to whole grain options, and healthy ways to enjoy any rice you choose. Rice is a grain. Brown rice is whole-grain rice, with all parts of the grain remaining intact.
On the other hand, with white rice, the grain is polished in a way that removes two parts—the bran and embryo—and leaves a starchy section called the endosperm, according to the Harvard T.H. Chan School of Public Health, That process removes most of the naturally occurring B vitamins, minerals, phytochemicals, and fiber.
- White rice labeled “enriched” means that B vitamins and iron have been added back, but only at a fraction of their original levels.
- One cup of cooked white rice contains just over 200 calories, about four grams of protein, 44 grams of carbohydrates, and less than one gram of fiber, according to the Department of Agriculture,
That’s about the number of carbs in three slices of white bread. White rice does contain nutrients such as magnesium, phosphorous, manganese, selenium, iron, folic acid, thiamin, and niacin, according to this article from 2016 in the Journal of Nutritional Science and Vitaminology,
White rice is also low in fiber and fat. Compared to brown rice, the vitamin and mineral content in unenriched white rice is fairly low. For example, a one-cup portion of brown rice provides 78 mg of magnesium compared to 19 mg in white rice. And the potassium content of brown rice is 174 mg per cup cooked compared to 55 mg in white rice.
How many Calories in Rice? (Cooked)
According to the Department of Agriculture, brown rice also packs more fiber at three grams per cup cooked. It does make sense that white rice would have fewer nutrients than brown rice since when the bran is removed, some nutrients are too, according to this article from 2016 in the Journal of Nutritional Science and Vitaminology,
Excess rice consumption may lead to post-meal spikes in blood sugar and, in turn, raise insulin levels. A 2020 study published in Diabetes Care looked at data from more than 130,000 people in 21 countries. The researchers found that higher consumption of white rice was associated with an increased risk of incident diabetes,
However, they pointed out that while other studies have received similar results, other studies have drawn different conclusions about white rice’s impact on diabetes risk. For instance, a study from 2015 published in Annals Nutrition and Metabolism is population-based in China and showed that a diet with high white rice intake led to a lower prevalence of diabetes.
Cooking and cooling starches, including white rice, have been shown to increase the formation of resistant starch. According to a 2014 article from Critical Reviews in Food Science and Nutrition, resistant starch is a unique carbohydrate that’s been shown to naturally up the body’s fat-burning furnace.
You can’t digest or absorb resistant starch. And when it reaches the large intestine, it gets fermented, which triggers the body to burn fat. A study from 2015 in the Asia Pacific Journal of Clinical Nutrition analyzed the resistant starch contents of cooked white rice cooled for 10 hours, and cooked white rice cooled for 24 hours and then reheated.
The results showed that cooling the rice upped the resistant starch content. The consumption of cooked white rice that was cooled for 24 hours and then reheated resulted in significantly lower post-meal blood sugar responses compared to freshly cooked rice. So, if possible, allow white rice to cool to room temperature before eating or chill in the refrigerator for later use.
Keep in mind that no single food makes or breaks the healthfulness of your overall eating pattern, and white rice is an important staple in many cultures. If you choose white rice over whole grain, consider cooling it before eating it to blunt its impact on blood sugar.
Add rice to a breakfast scramble and eggs or plant-based egg substitutes, veggies, and herbs. Enjoy a grain bowl with rice, veggies, and lean protein. Add it to stir-fries, soups, and veggie chili, or serve it as a side dish. Tasty rice treats include rice pudding, sticky mango rice, sweet coconut rice, and even toasted rice ice cream. Rice can also be used in place of oats as a hot or chilled breakfast porridge prepared with plant milk, fruit, nuts or seeds, and spices.
